If I go through Nylas’ process of migrating my V2 application to a V3, does the V2 application function the same after the entire process, that is up until Dec 31?

In general yes you can still use v2 after migrating to v3, with one specific exception.
Nylas isn’t changing anything on your apps or the v2 infrastructure for you, because we want you to be able to verify that your migration is complete and working.
The one exception for that is Scheduler, which has an (opt-in) automatic migration tool. I believe that once you’ve migrated your scheduling pages, the old v2 version is inaccessible, but I’d need to double check.
